No, if you are not married to the baby's mother unfortunately you don't. California has developed some additional protections, but most of those relate to the certification you complete at the hospital, and your agreement to provide child support. In California, all custody and legal decision making in unmarried situations rests with the mother. If you wish to have legal rights regarding custody & visitation you must assert your fatherhood to establish "paternity". This is the only way the State of California will recognize you as the child's legal father, and allow the court to order custody, visitation and a measure of control or influence over important decisions in the life of your child.
